    1/2 lb Brown Sugar
    1/2 cup heavy whipping cream
    1/4 tsp baking soda
    1/4 cup butter
    1/2 cup powdered sugar


Picture shown is with my banana mini-muffins! Under 100 calories each, with frosting and banana garnish!


Bring sugar and whipping cream to a rolling boil over the stove. Allow to boil for a minute. Add in the baking soda and boil for another minute. Take off the heat and add the butter, but still refrain from stirring. Allow mixture to chill, and then beat. Add in the powdered sugar and continue to beat for a stiffer consistency and a bit of a different taste

Should make about a cup and a half of frosting. I use this with mini-cupcakes and use this on 48 mini cupcakes (hence, 1 recipe = 48 'servings'). Easily doubled for more generous frosting on a whole cake.

Serving Size: Frosts 96 cupcakes lightly (48 more traditionally)
