Ingredients

6 tbsps Coconut oil
3 large eggs
3/4 cup Coconut Milk (So Delicious)
1 cup of Enjoy life Mini Chocolate chips
1 cup of Coconut Flakes
1/2 cup of Brown Sugar
1 Box of King Arthur Gluten Free Muffin Mix (16oz)
Tips
You can probably make more than 16 muffins with this recipe, I tend to over fill my muffin pan to the top will overflow and be crusted.
Directions
Heat Oven to 375 degrees F
Mix together 1/4 cup of coconut, 1/4 cup of enjoylife mini chocolate chips, and 1/2 cup of brown sugar and set aside for topping.
Stir together oil, eggs and Muffin Mix. Then Beat in with your mixer the milk, 1/4 cup at a time, scraping sides and bottom of bowl until mixed. Continue beating on medium speed until the mixture thickens.
Then Stir in 3/4 cup of the coconut and 3/4 cup enjoy life mini chocolate chips.
In a greased muffin or cupcake pan, fill each cup 3/4 of the way filled.
Then use the mixture set aside to sprinkle on the top of the uncooked muffins.
Cook Muffins for 18-25 minutes, keeping a close eye on them just after the 18 minute mark to keep them from burning.
Serving Size: Makes about 16 Muffins
