    4 Cups Red Potatoes Chopped Into Cubes
    1 Cup Smart Balance Light Butter Melted
    1 Cup Parsley Chopped
    2 Tsp Lite Salt
    4 Cups Water


Cut the potatoes into cubes and add them to the slow cooker. Cover them with the water and cook on high for 4 hours. After the 4 hours preheat the oven to 400 F. Pour the potatoes into a pan and pour the melted butter over them. Then pour the parsley over them and gently mix it in. Sprinkle the salt over all of the potatoes cover and cook for 10-15 minutes.
