Ingredients

    1 cup onion diced
    2 tsp olive oil
    1 cup celery diced
    4 oz uncooked Arborio rice
    1 1/4 cup fat free chicken broth
    10 oz extra lean ground turkey
    1/2 tsp dried tarragon
    1/2 tsp table salt
    1/4 tsp black pepper

Directions

In a 2-quart microwave-safe casserole, combine onion and oil, microwave for 2 minutes.

Add rice and microwave for 1 minute.

Add broth microwave for 6 minutes.

Stir in chopped celery, ground chicken, and spices. Microwave for 8 minutes or until chicken is no longer pink.

Remove casserole from microwave and let stand covered for 10 minutes until liquid is absorbed. Test to make sure rice is cooked.
