Number of Servings: 24


    Pineapple, canned, 1 1/2 cups, crushed & drained
    Egg, fresh, 4 large beaten
    Flour, white, 4 cups
    Milk, 1%, 1 1/2 cups
    Granulated Sugar, 1/2 cup
    Canola Oil, 1/2 cup
    Baking Powder, 2 tsps
    Coconut, 1/2 cup, shredded


If you wish a sweeter muffin add an extra 1/2 sugar or honey.


Sift together dry ingredients. Add in beaten eggs, milk and oil. Stir until almost mixed. Add pineapple and stir until just mixed. Spoon in greased medium muffin tins (or use paper liners). Bake at 425 degrees for 20 minutes. Turn out of pans and cools on wire racks.

Serving Size: Makes 24 muffins.
