    4 stalks broccoli, chopped
    3 stalks celery, chopped
    2 whole carrots, chopped
    5 cups unsweetened soy milk
    3/4 cup flour
    5 cups vegetable stock
    1 small onion, chopped
    2 small potatoes
    3 cloves garlic, minced


Only puree the soup mixture for about 45-60 seconds.


Chop broccoli into small and medium-sized florets, including stem. Reserve about 2 cups of florets only to add later, as well as the chopped carrots and celery.

Cook broccoli (stems and florets), onion, garlic, and potato in vegetable stock until soft (about 15-20 min). Add flour and puree in a food processor or blender until somewhat smooth. Add soy milk, and cook on medium/low heat with remaining broccoli, carrots, and celery until done. Add salt/pepper and other seasoning as desired.

Recommended seasoning: garlic powder, a dash of chili powder, pepper, salt, basil, ginger.
