Introduction

Pork fried white rice with red bell pepper, onion, & mushrooms. Pork fried white rice with red bell pepper, onion, & mushrooms.
Number of Servings: 8

Ingredients

    -Six cups cooked white rice (can be exchanged for brown)
    -One thick Lean Pork Loin Chop.
    -Two Medium Bell Peppers, chopped.
    -One cup Onions, chopped.
    -Four Large White Mushrooms, chopped.
    -Three Eggs.
    -Olive Oil. (Enough for the frying pan.)
    -Soy Sauce. (Lite or Low Sodium can be used.)

    Optional:
    -Sriracha chili sauce if you like spice.
    -Any other veggies you'd like.
    -Leave out pork for meatless version.

Directions

Cook rice. I use my rice cooker to steam it, you may cook it however you wish.

Heat large frying pan/pot or Wok. You need enough room for all the veggies, meat & the rice. Add Olive Oil, enough to coat bottom of pan. Take Pork chop, cut into bite size pieces. Add to pan, cook through. Once the pork is cooked through, add onion & bell pepper. Cook onion & peppers till tender. Add mushrooms. Cook.

You can either scramble to eggs in a separate pan, or if you have room you can move the meat mix to one side of the pan & scramble eggs in the same pan. Once eggs are cooked, mix them into the meat, veggie mix. Add rice, stir. Add Soy sauce to taste.

Stir & serve.

Serving Size: About 8 one cup servings.
