Ingredients

    4 chicken thighs

    6 stalks of celery

    1 large onion

    1 large or 3 small carrots

    1/2 cup white wine

    3 chicken bullion cubes

    1 pinch of dried rosemary

    6 cups water

    salt and pepper to taste

Tips

Use boneless chicken to reduce prep time, but leave the skin on otherwise your vegetables will just burn instead of cooking. Alternately, cook the vegetables in olive oil or other cooking oil.


Directions

Brown chicken in the bottom of soup pot. Dice onion, carrot(s) and celery into 1/2 inch pieces. Remove browned chicken from pot, and add vegetables. Cook vegetables until soft while you remove the chicken from the bones. Dice up chicken into bite size pieces and return to pot. Add 1/2 cup white wine and stir 2 or 3 minutes, then add 6 cups hot water, a pinch of rosemary, 3 chicken bullion cubes, and salt and pepper to taste. Simmer 15 minutes, stirring occasionally.

Serving Size: Makes 6-8 2-cup servings
