Ingredients

1 1/4 cup apple, chopped
1/4 cup unsweetened vanilla almond milk
1/4 cup flax meal
1/4 cup whole wheat flour
4 Tbsp Stevia
2 Tbsp sugar-free maple syrup
2 Tbsp eggbeaters (or egg whites)
2 Tbsp natural (unsweetened) apple sauce
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
Tips
Enjoy as-is or with a light butter spread or reduced fat creamcheese!
Directions
Preheat oven to 400 degrees. Combine dry ingredients in a mixing bowl (flax meal, whole wheat flour, stevia, cinnamon and baking powder), mix in remaining ingredients minus apples. Once well combined, gently fold in apples and divide batter amongst 5 cupcake papers in a cupcake tin. Top with additional cinnamon if desired and bake for 18-20 minutes.
