Introduction

This is a refreshing and filling salad, just perfect for summer dining. This is a refreshing and filling salad, just perfect for summer dining.

Ingredients

    1 cup truRoots Sprouted Rice and Quinoa Blend (or just plain quinoa)
    1 3/4 cup water (or chicken broth for more flavor)
    1/2 c. finely chopped red pepper
    1/2 c. finely chopped yellow pepper
    1/2 c. finely chopped orange pepper
    1/2 c. finely chopped green pepper
    6 Tlbs. Bernstein's Cheese Fantastico Light dressing



Tips

Create a cool summer main dish by adding cooked, chopped chicken to this recipe.


Directions

Bring water or broth to boiling and add rice & quinoa blend. Cook according to package directions. If using only quinoa, reduce cooking time and follow package directions.
Allow mixture to cool completely.
Stir in all the chopped peppers and onions.
Add dressing, stir together and serve.
