Introduction

Number of Servings: 6

Ingredients

    1/2 lb. ground sirloin, 96% extra lean
    1/2 onion, diced
    1 cup carrots, diced
    1 green bell pepper, diced
    14.5 oz. diced canned tomatoes, no salt added
    12 oz. frozen corn
    15.5 great northern beans, rinsed and drained
    1 T. extra virgin olive oil

Tips

This recipe can easily be adapted to fit your famiy's preferences. I have made it with cooked rice instead of the corn. Black beans and chili powder give it a Mexican flavor. Pasta and Italian seasoning are also good.


Directions

Brown the ground sirloin with onions, carrots, and green bell pepper until meat is no longer pink. Add tomatoes, corn, and beans. Bring to boil. Reduce heat and simmer for 30 minutes. Stir in olive oil just before serving.
