Number of Servings: 8


    1 large egg
    1.75 cup Egg Beaters
    2 cups chopped kale
    2 cups chopped beet greens
    8 slices of Jarlsberg Light, finely diced


Preheat oven to 375 degrees. Spray glass or ceramic baking dish with Pam.

Wilt beet greens and kale in a non-stick frying pan for 2-3 minutes. Place in baking dish and scatter shredded or diced cheese over greens. Mix the one egg with the Egg Beaters and pour over cheese and greens. Season with salt and pepper.

Bake for 30-35 minutes, wait for 10 minutes and cut into 8 equal pieces.
