    2 pounds Lean Roast Beef
    1 packet Old El Paso Fajita Seasoning Mix,
    3 cups Pinto Beans
    1 cup Shredded Cheddar or Colby Cheese, Low Fat,
    10 Whole Wheat Tortilla,
    1 cup Iceberg Lettuce, shredded
    1 cup diced Tomatoes,
    Taco Sauce to Taste


Makes 10-12 Servings
1. Spray a pan with Canola Cooking Spray, season beef with a little salt and pepper if desired.
2. Roast until almost cooked, reserve pan with drippings.
3. When cooled, take 2 forks and shred the beef(pull along the grain).
4. Take the reserved pan and begin heating it on simmer, add the fajita seasoning and water, mix until dissolved.
5. Add Beef and mix until coated, simmer for 5 minutes, set aside.
6. Take 1 tortilla, fill almost to the center with 2oz of meat, 1/4 cup of cooked pinto beans, and 1/2oz cheese.
7. Roll up and place seam face down on baking pan. Continue until all are completed. If it is over full just lessen the amount of filling. Make sure there is no liquid going into the filling mixture.
8. Bake in a 350 degree preheated oven until golden brown.
9. Add Taco Sauce, Lettuce and Tomato to taste.
10. Enjoy
