Introduction

Adapted this from a recipe in O magazine. You can basically use whatever vegetables are in season (asparagus, peppers, zucchini, etc.). This is for a single serving, but it's easy enough to double it or quadruple it or whatever. Just use one square of aluminum foil for each serving and bake all packets together on one cookie sheet. Ingredients

    1/2 cup of crumbled feta cheese
    6 spears of asparagus, chopped
    1/2 cup diced tomato
    3 thinly-sliced slices of onion
    1 T capers, drained
    1/2 garlic clove, thinly sliced
    fresh ground black pepper to taste
    dried oregano (or fresh) to taste
    crushed red pepper to taste

Tips

Serve with garlic bread and a green salad.


Directions

Preheat oven to 350 degrees. Combine all ingredients on a square piece of aluminum foil. Seal the packet tightly and place on a cookie sheet. Bake for 15 minutes. Carefully open the packet and transfer contents to plate.
