Easy, cozy, and not as bad as it could be. Easy, cozy, and not as bad as it could be.
Number of Servings: 4


    2 Tablespoons unsalted butter
    1 Medium Onion, diced
    2.5 Tablespoons Whole Wheat Flour
    2 cups of unsweetened Almond Milk
    2 small cans of tomatoes


Melt butter until foam subsides, cook onions until translucent. Add flour and cook, stirring, until floury smell subsides. Slowly, stream in almond milk, whisking as you add. Continue to whisk as it reaches a scald and allow to cook on low until you notice a thickening. Add tomatoes and raise heat to medium; cook until you feel it will puree nicely (20 minutes, usually). Add salt and pepper to taste (sometimes I finish with a sweetner as well).

Puree and strain.

Serving Size: Makes 4 1.5 cup servings
