Number of Servings: 2


    4 to 5 oz skinless, boneless chicken breast
    1 oz. goat cheese
    1/2 C. diced apples
    1/3 C. dried cranberries
    Salt & pepper


Preheat oven to 425 degrees.
Pound out chicken breast.
Season with salt, pepper, cumin, cinnamon to taste
Spread soft goat cheese on chicken breast
Add apples and cranberries, spread out evenly.
Bake for 20 to 25 minutes or done through to 170 degrees Farenheit.

** Although goat cheese does have lactose, it is a dissimilar construction from cow's milk and usually does not affect the person with lactose intolerance the same as a cow's dairy product will.
