Ingredients

    1 lb boneless skinless chicken breast
    6 oz low fat plain yogurt
    1 egg white
    1 T Dijon mustard
    12 Triscuits
    1/2 C Panko breadcrumbs
    1/2 tsp cayenne pepper
    1/2 tsp garlic powder

Directions

Preheat oven to 400*

Combine yogurt, egg white and Dijon in a large bowl. Add chicken to yogurt mixture and set aside.

Process Triscuits in a food processor until fine crumbs, mix with Panko, cayenne and garlic powder.

Coat chicken with breading and place on baking sheet. Spray chicken lightly with cooking spray. Bake 35-40 minutes until cooked through.
