    For The Cheesecake Part
    2 Eggs
    2 Tsp Vanilla Extract
    1 1/2 Cups Sour Cream
    1/2 Cup Sugarleaf
    1 Lb Fat Free Cream Cheese
    2 Tbsp Smart Balance Light Butter

    For The Crust Part
    1 1/2 Cups Ground Almonds (I Use The Food Processor To Grind Them)
    1/4 Cup Sugarleaf
    1/4 Cup Smart Balance Light Butter


You can add whatever toppings you like.


Preheat oven to 350 F and spray a muffin pan. In a large bowl, with a hand mixer, blend together eggs, vanilla, sour cream and sugarleaf. Then slowly mix in the the butter and cream cheese. In another bowl mix together the ground almonds, sugarleaf, and butter. Spoon the almond mixture into each muffin cup and smooth it down. Then evenly divide the cheese mixture on top of each crust. Bake them for 20-25 minutes until they appear done.
