    1 lb. lean ground turkey
    1/2 C. whole wheat panko bread crumbs
    1/4 C. milled flax seed
    3 tbsp. boxed egg whites
    1/4 C. nutritional yeast
    1/2 onion, diced fine
    To taste
    Minced Garlic
    Italian Seasoning
    4 skinny cow cheese wedges (flavor of your choice
    2 cups frozen spinach thawed and dried or fresh spinach if available


Combine all ingredients except spinach and cheese wedges. The spices l listed were the ones I used. Feel free to add seasonings to taste and the ones you like. On a piece of parchment paper, spread meat combo out into a fairly long, narrow strip. Spread spinach and crumble cheese wedges on turkey roll and then use parchment paper to help roll the turkey.
Bake for about 1 hour in a 400 to 425 degree oven.
