Introduction

Ingredients

1 med head cauliflower, cut into large even chunks
4 cloves of garlic, minced
3/4 cup low sodium vegetable broth
1/4 c dried minced onion
1/4 tsp celery salt
1/4 tsp white pepper(black pepper will work too)
Tips
DO NOT overcook the cauliflower!!! You will wind up with a soupy mash!! Not to mention vegetables that have had all the nutrients cooked out of them!
Directions
Spray a medium saucepan with cooking spray. Set over medium low heat. Add garlic and cook gently until garlic begins to soften and barely brown.
Add cauliflower, broth, minced onion, celery salt, and white pepper. Gently stir to combine. Raise heat to medium, or until mixture comes to a simmer. Cover and cook for about 10 minutes, or until cauliflower is just fork tender.
Add mixture to a food processor and process until smooth and creamy.
Serve warm, refrigerate leftovers.
