    2 tbsp olive oil
    1 16-oz sirloin steak, cut into cubes
    2 large onions, chopped
    4 celery stalks, chopped
    8 oz. baby carrots
    1 cup sliced button mushrooms
    3-4 tbsp minced fresh (or in jar) garlic.
    leftover grilled portabella mushrooms sliced
    leftover grilled eggplant, cut into cubes
    leftover yellow squash, cut into cubes
    1 can diced tomatoes in juice
    3 cups beef broth
    3 tbsp corn starch, mixed with 3 tbsp tap water


Pour 1 tbsp olive oil into soup pot. Sautee steak cubes until just browned on all sides. Remove from pot. Sautee onions until clear and just beginning to camelize. Remove from pot. Sautee celery and baby carrots, remove from pot. Sautee fresh mushrooms and garlic. More olive oil can be added to the pot as needed. Return all of the sauteed ingredients to the pot and add remaining vegetables. Add can of tomatoes. Pour 3 cups of beef broth into pot and stir. Add the corn starch mixture and stir until incorporated. This will thicken the stew. Simmer on low heat for 1-2 hours.
