Introduction

This was adapted from a recipe my mom makes when the red leaf lettuce is bountiful in the garden. I was hesitant to try at first, but now enjoy it as a quick & easy change of pace. Ingredients

1/2 Pint Fat Free Half & Half Cream
    2 Tablespoon White Vinegar
    2 Packets Equal Sweetener
8 ounces Red Leaf Lettuce, torn into pieces
    4 Green Onions, sliced.

Tips

The dressing keeps well in the refrigerator for a few days. Just add to lettuce right before serving. Leaf lettuce works best because the dressing clings better. Add more sweetener if desired, the original recipe called for 2 Tbsp sugar and full fat Half & Half.

Directions

Mix Half & Half with vinegar in glass jar or bowl. Let stand for 5 minutes. (Will Sour or Kurdle). Add Sweetener.
Place Lettuce and onion on four serving plates. Pour 1/4 cup dressing on each salad right before serve.
