Introduction

Served warm or cold this is great for making up when you have very little time to prepare or if you like to pre-make some lunches. I usually keep 2 servings for myself and send one with my husband for lunches. Ingredients

    1 cup, uncooked Orxo
    2 cans tuna, in water
    1 cup frozen corn
    1 cup salsa
    1 cup, chopped green pepper
    2 Tbsp chopped Cilantro
    1 Lime Wedge
    Salt and pepper dash

Directions

Cook orzo as directed.
In the meantime combine tuna, corn, salsa and green pepper in a bowl.
Once Orzo is done add to bowl of ingredients.
Add chopped cilantro.
Season with salt and pepper.
Serve with a lime wedge.

Serving Size: Makes 4 1.5-cup servings
