Introduction

Ingredients

    Olive Oil, 2/3 cup
    Cider Vinegar, 1/3 cup
    Red Onions, raw, 1/3 cup, chopped
    *Parsely, raw 1 Tablespoon, 1 tbsp
    Fresh Chives, 3 tbsp chopped
    Honey, 1 tbsp
    *Grey Poupon Dijon Mustard, 4 tsp
    Lemon Peel, 2 tsp
    Red Potato, 453 grams (3#), quartered or halved
    Bacon, 10 medium slices, cooked
    Blue Cheese, .75 cup, crumbled, not packed
    Salt, 1 tbsp
    Pepper, black, .5 tbsp

Directions

Cook potatoes in a large pot of boiling, salted water until just tender, roughly 8 - 10 minutes. Drain, rinse with cool water, then combine with the dressing mixture (made while potatoes are boiling) and blue cheese, tossing to combine. I usually get the bacon cooked at the same time too.

Taste - add more salt and pepper to your tastes, if you prefer.

Great to do this (so far) a day in advance and store in the refrigerator. I love the melding of the flavors this way.

Just before serving top with the crumbled bacon.
