    Peppers of all colors, garlic, onions, sweet corn, cilantro, cumin and black beans mixed with brown rice.


Saute garlic, onion and peppers in the olive oil. Add vegetable brothr to keep items from sticking and over browning. Add cooked black beans and corn and continue to cook. When the items are soft add cumin and cilantro and stir with a bit more broth. Put filling on burrito and add tomato and lettuce.

Serving Size: 1 large stuffed burrito
