Introduction

Ingredients

5 cups broccoli florets
1 cup diced celery
2 cups Jicama (Yambean)
1/2 cup chopped scallions (green onions)
1 pound bacon cooked and crumbled
Dressing
1 cup mayonnaise
2 tablespoons vinegar
1/4 cup Zylitol (Splenda will work)
1/2 teaspoon curry powder
Tips
The original recipe had 2 cups grapes, real sugar, and 1 tablespoon pine nuts.
I needed to revamp for "Low-Carb" (Phase 1).
Directions
Mix all ingredients for dressing and set aside.
Toss together broccoli, celery, Jicama and scallions.
Add dressing and mix until evenly coated.
Add bacon and stir.
Refrigerate until serving
