    2 pounds lean ground beef
    2 large eggs
    1/2 cup grated parmesan cheese
    1/4 cup diced red onion
    1/4 cup diced roasted red bell pepper
    2 tbls chopped parsley
    2 cloves garlic, minced
    1/2 tsp dried oregano
    1/2 tsp dried basil
    1 tsp salt
    1/2 tsp pepper
    4 oz thinly sliced deli ham
    8 ox mozzarella cheese shredded
    Special equip is a 9x5 loaf pan


1. Preheat oven to 350 degrees

2. In a large bowl, mix together the beef, eggs, parmesan, onion, peppers, parley, garlic, herbs, and seasonings.

3. Spread a peice of waxed paper on the counter or a baking sheet. Place the meat mixture on the waxed paper and form into a 10x8 inch rectangle

4. Place the ham in a layer on top of the meat and follow it with a layer of cheese.

5. Begining with the short end, roll up the stuffed meat loaf mix like a jellyroll and seal the edges all around by pinching the meat. Place the roll, seam side down, in the loaf pan.

6. If desired spread a coat of low card ketchup over the top, but adjust carb counts.

7. Bake for about 1.25 hours, until a meat therometer registers 165 degrees. Drain off the fat and let the meatloaf rest at least 10 minutes before cutting into 8 slices.
