Introduction

Delicious as a breakfast or a dessert--and a great way to get rid of stale bagels Delicious as a breakfast or a dessert--and a great way to get rid of stale bagels
Number of Servings: 8

Ingredients

    3 blueberry bagels
    1/4 c. butter, cubed
    5 beaten eggs
    2 c. 2% milk
    2 no-sugar-added peach fruit cups
    1/2 c. brown sugar
    1/2 c. splenda
    2 dashes nutmeg
    1 tsp. orange zest

Tips

For a low-fat recipe, delete the butter and an egg or use non-fat milk.

Directions

Break the bagels into 1-inch cubes. Lay out to dry on a cookie sheet under a dish towel (or your kids will steal them!).

Mix wet ingredients in an ungreased 2-quart baking dish. Add peaches with juice and bagels. Wet bagel chunks thoroughly--they float. Bake in a 350 degree oven for 40-45 minutes, until a knife inserted near the center comes out almost clean.
