    Boca Meatless Crumbles
    Olive oil
    Swiss cheese, shredded
    4 whole eggs
    4 egg whites
    1% milk
    salt & pepper to taste


sautee crumbles in olive oil and add scallions and mushrooms about 5 - 8 minutes. Transfer to bowl to cool. Add cheese after slightly cooled. Whisk eggs and egg whites and add salt, pepper and nutmeg. Spoon into a 12 muffin tin. Add a spoonful of the "sausage" mixture to each muffin tin. Bake until tops turn brown, about 25 minutes.
