Number of Servings: 12

Ingredients

    1 cup Quinoa
    1/2 cup of Mung Beans
    1/2 cup of Red Lentils
    1/2 cup of Bulgur cracked wheat
    1 pint of Cherry tomatoes (quartered)
    1 large cucumber peeled and cubed
    1 jalapeņo pepper (thinly chopped)
    4 green onions (chopped)
    1 red pepper (chopped)
    1 orange pepper (chopped)
    1 large bunch fresh parsley (chopped)
    1 freshly squeezed lemon
    1/2 cup chia seeds

Directions

Presoak Quinoa in hot water
Presoak Bulgar Cracked Wheat in hot water

Add 1 cup of Quinoa to to 2 cups of boiling water then add 1 tsp olive oil and 1 tsp salt cook uncovered for 20-25 mins then drain

Add 1/2 cup of mung beans to 1.5 cups of boiling water simmer for 40 mins
Add 1/2 cup of red lentils to 1.5 cups of boiling water simmer for 40 mins
Add 1/2 cup of Bulgar to 1.5 cups of boiling water simmer for 40 mins

Drain each of the seeds/beans and mix all ingredients together

Serving Size: 1 cup
