Number of Servings: 8

Ingredients

    3 cups white rice (raw)
    2 cups black beans (one 16 oz can)
    5 cups water (could substitute coconut milk for water)

Directions

add rice, water and beans in a stock pot on high heat, when the liquid starts to boil, lower the heat (very low) and cover the pot. Let cook for 15 minutes, then, using a fork, fold the rice over, cover with pot lid, and cook for 10 minutes or until rice is finished.

Serving size - 1 cup cooked
