    4 boneless, skinless chicken breast halved (about 4 oz. each), pounded thin
    1/2 tsp salt
    1/2 tsp black pepper
    2 teaspoons margarine
    1/4 cup reduced-sodium fat-free chicken broth
    2 cloves garlic, minced
    2 tbsp lemon juice
    4 slices lemon
    2 tbsp chopped parsley, for garnish


1.) Sprinkle both sides of chicken with salt & pepper, and set aside in glass baking dish. Microwave margarine in 1-cup glass measuring cup at 50% for 1 minute, or until melted. Combine with chicken broth, garlic, and lemon juice and pour over chicken. Cover with waxed paper, and microwave at High until chicken is no longer pink in the center, 5 to 6 minutes.

2.) Garnish each chicken breast with lemon slice; sprinkle lightly with paprika and parsley. Spoon sauce over.

Makes 4 servings

Variations: You can substitute salt for sea salt (or omit altogether); Use your favorite reduced calorie margarine or spread; Substitute chicken stock for broth.

Microwave times vary, please be sure to make sure chicken is no longer pink before serving.
