    1 pkg Mandarin Silken Tofu 530g block
    2 Portabello Mushroom (wiped clean, diced)
    4 c Vegetable or Chicken Broth


You can add some zip with a few drops of hot sauce. This soup can be eaten as a chilled summer soup as well.


1. In a medium saucepan, add 1 cup of the broth, and the diced mushrooms.
2. Bring mushrooms to a boil, then simmer for about 10 minutes.
3. Pour remaining 3 cups of the broth, and tofu into a large soup pot.
4. Wisk til well blended (or use an electric blender or hand blender).
5. Add cooked mushrooms mixture into soup pot mixture.
6. Add salt and pepper, or any spices you desire.
7. Heat soup thoroughly.
8. Pour into soup cups/bowls and garnish with some parsley flakes or chives if desired.
