Ingredients

1 package Smart Ground (ground beef substitute
1 medium Onion, chopped
3/4 c carrot, diced
1 c. celery, chopped
1 lb can whole tomatoes
Canned black beans
Canned kidney beans
Spicy pepper rings (Vlasic Zesty Banana Pepper rings)
1 Red pepper, medium
1 c. Corn kernals (canned or frozen)
Mexican Chilli powder
Directions
"Brown" Smart Ground (minced beef substitute) and onion.
Add:
- Tomatoes
- Kidney and Black Beans (rinsed)
- Carrot, celery and red pepper
- Corn kernals
- Hot pepper rings (to taste)
- Chilli powder (to taste)
Simmer about 2 hours or longer until vegetables are soft. The longer it sits the better the flavor, so you can make it the night before.
Makes 6 large servings.
