Introduction

Ingredients

    9 lasagna noodles
    16 oz 1% cottage cheese
    4 oz Neufchatel cheese (reduced fat cream cheese)
    1 10 oz can reduced fat cream of mushroom soup
    1 10 oz bag of frozen mixed vegetables
    1 16 oz jar Alfredo sauce
    Spices to taste

Tips

Season the filling to taste - I used a lot of garlic, oregano and parsley in my recipe


Directions

Preheat oven to 425 F.

Precook the noodles until they are pliable, but still firm (about 10 minutes)

Mix frozen vegetables with the soup, cottage cheese, and cream cheese

Spread a layer of alfredo sauce on the bottom of the pan. Place 3 noodles on the bottom of the pan, then spread half the cheese and veggie mix over the noodles. Repeat (sauce, noodles, filling).

Place the last 3 noodles on top of the lasagna and spread the remaining sauce over the top.

Bake covered with foil for 20 minutes. Remove foil and bake another 25 minutes. Let cool slightly before serving.
