    3 C water
    1 C carrots, trimmed and cut on the diagonal
    1 Tbsp minced garlic
    1 tsp dill
    2 tsp olive oil
    1 Tbsp fresh squeezed orange juice
    ˝ tsp ground cumin
    dash of salt


Bring water to boil. Add carrots. Cook 3 minutes, or until crisp-tender. Drain.

Combine garlic, dill, olive oil, orange juice and cumin. Toss carrots with mixture gently, to coat.

Serve warm, or at room temperature.

Serving Size: Makes 8 servings of 2 oz of carrots (approx. 1/3 C)
