Ingredients

    1/2 bunch kale
    1 sweet potato
    4 strips bacon
    1/2 onion
    7 eggs
    1/4 cup milk
    1 cup cottage cheese
    mozzarella cheese

Directions

chop kale & onion & sautee in pan until wilted
peel sweet potato then shred
mix kale, onion, sweet potato, bacon, & cottage cheese in bowl, then spread in bottom of greased 13x9 pan.
whisk together eggs, milk, & salt & pepper, pour over mixture. Top with mozzarella cheese, then bake at 375 for 35 minutes.
