What we did with leftover wild rice for supper one night. What we did with leftover wild rice for supper one night.
Number of Servings: 8


    1 cup cooked wild rice blend
    1 cup white cooked rice (cooled)
    1 med chopped red onion
    4 med tomatoes chopped
    1 english cucumber, chopped
    2 TBS lemon juice
    3 TBS olive oil
    3 TBS red wine vinegar
    4 oz crumbled light feta cheese
    1 TBS dried oregano

    kalamata olives served on the side


Cook wild rice and let cool if not using leftover. Cook and cool white rice.
Chop tomatoes, onion and cucumber. Mix together with cooled rices, add lemon juice, olive oil and red wine vinegar and oregano. Add feta and mix well. We serve the olives on the side, so are not in the nutritional count.

Serving Size: Serves 8 generously
