Introduction

Ingredients

3 large bananas, mashed
1/2 cup sweetener
1 egg, beaten
1 tsp vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup whole wheat flour
1/2 cup rolled oat (instant is fine)
1/2 cup applesauce
1/2 teaspoon salt
1/2 cup chocolate chips
Tips
Freeze banana's that starting to over-ripen. When you're ready to bake, thaw on counter or microwave for 30 seconds. Then mash!
Directions
Add sweetener to mashed bananas and mix.
Add beaten egg, and vanilla and mix.
In a separate bowl mix all dry ingredients.
Add dry ingredients to the banana mixture and mix well.
Mix in applesauce.
Add chocolate chips and Stir.
Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
Bake for 20-25 minutes at 350.
