Ingredients

    2/3 cup cooked quinoa
    1/4 cup baby spinach
    1/4 cup shredded carrots
    2 tbsp crumbled blue cheese
    1 tbsp craisins
    3 oz chopped chicken breast
    1 tbsp balsamic vinegar
    1 tsp extra virgin olive oil

Tips

The original recipe calls for grilled chicken breast and 1 tbsp chopped walnuts. I used canned chicken breast and left out the walnuts.


Directions

Toss first 6 ingredient together. Drizzle with vinegar and oil.
