    2 Bananas
    1/4 C. Olive Oil
    2 tsp Vanilla Extract
    1 tsp balsamic Vinegar
    3/4 C. Stevia
    3 Eggs (I use smart balance) (Separated)
    1/2 C. Sweet Rice Flour
    1/4 C. Tapioca Flour
    1/4 C. Coconut Flour
    1/2 C. Stevia
    2 Tbsp Hershey's Cocoa Unsweetened
    1 tsp baking soda
    1 1/2 tsp baking powder


Preheat oven to 375 degrees.
Separate egg whites and yolks. Whip whites until very frothy. Mash bananas and add remaining wet ingredients including egg yolks. Use a spoon rather than a whisk so that the egg won't be too thoroughly worked and will act as part of the leavening in the muffins.
Mix dry ingredients together. Add wet ingredients into dry ingredients. Fold egg whites into batter.
Spray a muffin pan with nonstick spray. Divide mixture evenly between 12 muffin holes.
