    1 can (15 oz.) black beans, drained and rinsed
    2 cans (15 oz.) yellow sweet corn
    2 lbs. boneless, skinless chicken breasts
    24 oz. salsa, mild
    Brown rice (optional)


You may add 1/4 cup of water to the mixture if the salsa is really thick. Original recipe says to add 1 cup shredded cheddar cheese at end and heat in crock pot for additional 15 minutes or until melted. This just adds fat and it tastes great without it.


Place drained and rinshed beans in crock pot as well as the sweet corn. Place half the jar of salsa over beans/corn mix. Put thawed chicken breasts on top and finally the remaining salsa. Cook on high for 2 1/2 to 3 hours in crock pot or until chicken is cooked through and pulls apart easily. Serve over brown rice (optional).
