    2 cups whole wheat flour
    2 1/2 teaspoons baking powder
    2 eggs
    3 tablespoons melted butter
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    2 cups lowfat buttermilk
    2 cups fresh blueberries


The more butter you add, the crispier the exterior of the waffle will be. If you don't like crispy, reduce the amount of butter. Oil can be substituted.


Mix dry ingredients together with a whisk. Beat eggs with a hand mixer. Add butter and mix well. With mixer, blend in dry ingredients alternating with buttermilk. Mix until smooth. Pour about 3/4 cup batter into each waffle iron square. Batter can also be used for pancakes.

Serving Size: Makes 18 - 4 1/2 inch square waffles
