Ingredients

Marinade:
2 Tbsp.lite soy sauce
1 Tbsp. Chinese rice wine or dry sherry
1 pound boneless pork sirloin
Sweet and Sour Sauce:
1/3 cup white vinegar
1/3 cup packed brown sugar
1/4 cup ketchup
1/4 cup water
1 Tbsp. cornstarch
2 tsp. lite soy sauce
1 tsp. chili garlic sauce
1 egg white beaten
cornstarch
3/4 cup pineapple chunks
1 small red bell pepper chunks, cut into 1 inch chunks
Directions
To prepare:
1. Combine marinade ingredients in a bowl. Add pork and stir to coat. Let stand for 15-20 minutes while you prepare sauce.
2.Combine sauce ingredients in a small pan and set aside.
3.Place egg white and cornstarch in separate bowls.
To cook:
1.Dip pork in egg white, drain briefly, then dredge in cornstarch;shake off excess, set aside.
2.Cook sauce over medium-high heat, stirring, until sauce boils and thickens. Stir in pineapple chunks and bell pepper. Reduce heat and simmer for 1 minute. Set aside.
3.Heat large skillet over high heat. Spray with cooking spray. Add pork and cook until golden brown and cooked through. (you may need to do this in 2 batches)
Add sauce to pan to warm.
