Make Ahead Stir Fried Veggies
1 cup onion, chopped or sliced into petals
1 clove garlic, finely minced
1/2 cup green pepper, chopped
12 grape tomatoes, quartered
1 cup mushrooms, sliced or chopped
1 tbsp extra virgin olice oil
salt, pepper, red pepper flakes to taste
I cook these ahead and store in the fridge until needed. Add to tofu or egg scramble to save some time. You could also serve over some type of grain, add to braised greens, wherever you would want to add some flavor and color.
Add garlic and peppers
Add mushrooms and tomatoes
Add water if the pan dries out
Season to taste
