    3 cups lettuce of choice
    1 1/2 oz goat cheese, crumbled
    1/4 cup dried cranberries
    1/3 cup walnuts, toasted
    1 scallion, diced
    1/2 tsp dijon mustard
    1 tsp red wine vinegar
    1/2 Tbsp olive oil
    1 Tbsp vegetable broth
    1/2 tsp splenda
    1/2 Tbsp honey
    1 dash salt
    1 dash black pepper


Put spring mix in a bowl. Crumble goat cheese over it. Sprinkle on cranberries and toasted walnuts.

In a separate bowl, whisk or shake together remaining ingredients. Pour dressing over the salad and toss. Serve immediately
