    1 cup: Onions, chopped (yellow or sweet)
    1 tbsp: Olive Oil
    5 PlumTomatoes, sliced thin
    2 cups: Zucchini, sliced
    2 cups: Yellow Summer squash, sliced
    1 tsp: Pepper, black
    6 tsp: Thyme, fresh
    1 tsp: Salt
    1 cup: Mozzarella Cheese, part skim milk shredded


If you like your vegetables firm bake for 45 min or less testing with a fork.

Spraying foil with non stick spray before covering dish will prevent cheese from sticking to foil.


Saute onions in pan with 1 tbsp olive oil over medium heat until limp & beginning to brown. While onions are cooking, slice tomatoes and place in single layer in bottom of sprayed, 9/13" pan. Slice zucchini and place in single layer over tomatoes. Slice yellow summer squash, place in single layer over zucchini. When onions are done place evenly over yellow summer squash. Add salt, pepper and thyme. Top with cheese. Cover dish with foil and bake at 350 degrees for 1 hour or until cheese is melted and vegetables are tender
