Introduction

Ingredients

    4 whole medium red ripe tomatoes
    1 serrano pepper (or more if you like it very hot)
    1/3 cup finely chopped onion
    2 tbsp finely chopped cilantro
    1/2 tsp salt
    1tbsp extra virgin olive oil

Tips

If you like it hotter, add more peppers.


Directions

Boil tomatoes and serrano pepper(s) for about 5 minutes until you can remove the skin from the tomatoes. Puree the tomatoes and pepper(s) in the blender until no big pieces remain.
Heat a pot and add the olive oil and the chopped onion. Once the onion is cooked (transparent) and before it burns, add the pureed tomatoes and serrano(s). Lower the flame, season with salt (and pepper, if desired) and add the cilantro. Let cook for about 5 minutes.
Serve alongside grilled meat, chicken, etc, drizzle on tacos, create enchiladas, the options are endless!

Serving Size: 1 tablespoon. Makes about 20 tablespoons (1 1/4 cups).
