Ingredients

    1 Chicken Liver boiled and chopped
    3/4 C Zucchini skin on chopped
    3/4 C Yellow Squash (summer squash) chopped
    3/4 C Red Pepper chopped
    1/2 C Onion chopped
    1 C Mushrooms with stems chopped
    5 Egg Whites

Directions

Boil chicken liver until cooked through, a few minutes. Wash and chop Zucchini, yellow squash and red pepper. Wipe off mushrooms with a damp paper towel and chop. Chop onion. Spray fry pan with Olive Oil cooking spray and saute veggies over medium heat until tender. Add chicken liver. Beat egg whites with a few tablespoons of water and add to pan. Stir for a few minutes until cooked through.
