    Vegetables of your choice 2.5 cup
    Reduced Fat Cheese, 1 cup, shredded
    Milk, 1%, 1.33 cup
    Egg, 2 large
    Egg white, 2 large
    Bisquick, .75 cup


The nutrition info is calculated based on vegetables, but this recipe is also delicious with a mixture of meat and vegetables as the filling.

This recipe can be doubled and baked in a 9x13 pan. Increase cooking time by 5 minutes.


Preheat oven to 400
Spray a pie plate with cooking spray.
Place vegetables in bottom of pie plate and cover with shredded cheese.
Combine remaining ingredients in a large bowl and mix well with a hand beater or immersion blender.
Pour batter over ingredients in pie plate.
Bake until golden brown and knife inserted halfway between center and edge comes out clean, 30-35 minutes.
Let stand 5 minutes before slicing.
